Gluten Free & Paleo Friendly Cookies

Who else is super excited that Spring is pretty much here? I am loving this slightly warmer weather and sunshine! It’s also nice to wake up to the sunshine in the morning!

With the new season upon I have such an increase in energy. And a drive to continue eating healthy! But what do you do when you want a treat? Something sweet you can enjoy? I’m not a fan of breaking my goals but I’m also a huge lover of chocolate!

Thankfully there is these Easy, Chocolate Cookies! Chewy and chocolatey like brownies but made with no diary, eggs or oil! Yes that is right! But how?

The base of these cookies are made from almond flour. This delicate flour is gluten-free and paleo friendly. Don’t be intimidated by using a flour substitute. Almond flour is great because of its health benefits and it really helps with the moisture in baking.

Can’t forget the cocoa powder! Using raw cocoa powder gives you more health benefits! If we are going to make healthy cookies might as well go healthy all the way!

For the sweetness I use coconut palm sugar. A healthier alternative but truthfully you can use any sugar choice you want. It has to be solid though. No honey or maple syrup. It will make the batter run and your cookies won’t bake properly. I’ve made these with organic brown sugar and powdered sugar. Every time they turned out great! Each substitute you can also use the same ratio of sweetener needed. My trick to get the perfect batter. Taste it before baking! It’s an eggless batter so no need to be concerned about getting sick!

Now, what brings this batter together? Water! Thats right! Almond flour and cocoa are sensitive to moisture. So a little water goes a long way with this recipe! With a bit of baking powder and salt. These cookies will be your new fave! Trust me!


Easy & Healthy Chocolate Cookies

Prep: 10 minutes
Yields: 12 cookies
Total time: 25 minutes
Ingredients
  • 3/4 cup Almond Flour
  • 1/3 cup Raw Cocoa Powder
  • 3 tbsp of Coconut Palm Sugar (or sweetener of choice)
  • 3/4 tsp of Baking Powder
  • 1/8 tsp of Salt
  • 1/4 cup Water

Instructions:

  1. Preheat oven to 350
  2. Combine all dry ingredients into a bowl. Mix with white whisk for a minute to remove large lumps.
  3. Add water and stir till batter forms. Be patient, it takes a minute. Do not add more water!
  4. Scoop 1tbsp mounds on to a baking pan lined with parchment.
  5. Bake for 10-12 minutes.
