Roasted Red Pepper Sauce

Eating healthy does not have to be boring. Biggest pet-peeve is when someone says “I want to eat healthy, but it’s just boring”. Que the eye-roll. I find healthy eating has more flavour than foods that aren’t good for our bodies. It’s all about combining ingredients and bringing them to flavour town!

And don’t think you need twenty ingredients. A couple of simple ingredients can make any dish super tasty. A staple in our house is this versatile Roasted Red Pepper Sauce. Versatile as in you can use it for anything! Use it in a pasta dish, or as a dip, combine it with hummus, covered cooked meat in it. Make a roasted red pepper stir fry. Honestly it’s endless!

The best part is that it’s only needs a few simple ingredients. Talk about money saving! The main ingredient in this dish is the Roasted Red Peppers. You can make them on your own or buy jarred in the store. I normally buy jarred because it’s cheaper than buy 4-5 Red Peppers fresh. But if you ever have extra red pepper on hand, definitely broil then yourself. Skin up for ten minutes till the skins are black. Remove from the oven and place directly in a bowl. Cover for fifteen minutes. The moisture helps soften the red pepper, allowing you to easily remove the skins. Super simple.

To help enhance the flavour I love to add roasted garlic. You can buy or make your own. Simply cut the top off, lay on aluminum foil. Cover with EVOO and the. Wrap it in the foil. Bake at 425 for 30-40 minutes. Again quick and easy, but store bought saves you time. You can also just add fresh garlic. It adds a bit more of a bite to the Sauce.

For a base you need an oil. My go to is EVOO but I have used refined coconut oil before. You need something to help bring it all together and create a beautifully smooth sauce. Be sure to chose a healthy oil, that is good for you. Not filled with bad fats.

Roasted Red Pepper Sauce

Ingredients:

  • 5 Roasted Red Peppers
  • 1 Roasted Garlic bulb
  • 1/3 cup EVOO or oil of choice
  • 1 tsp of salt
  • Optional: 1/4 tsp cayenne pepper

Instructions:

  1. Place all ingredients in a high power blender.
  2. Blend for 3 minutes till combined and smooth.
  3. Store in an air tight container till ready to use.

Yes it is just that simple! A easy Sauce always great to have on hand!
