Crockpot Chicken Cacciatore

Our life has been filled with meetings, many phone calls and house showings. Selling a house is not easy, especially with two kids and two dogs. The hardest part is keeping it clean! But thankfully, we are done all of that. We are now sold and just waiting for November, when we can finally move into our dream home.

All of the craziness in our house has me loving crockpot meals. Nothing easier than spending twenty minutes prepping a meal. Turning on the crockpot and a few hours later, you have a delicious meal.

This chicken cacciatore is so easy, taste delicious and makes your house smell homey. This is the perfect comfort food. All you do is throw the ingredients in, give a stir and leave for a couple of hours. My kids even love this dish! The crockpot makes the chicken very tender so the texture is preferable to them. My toddler “hates dry chicken”! But this recipe makes the chicken juicy and tender, and my oldest toddler will eat a whole chicken breast!

I usually pair this dish with gluten free linguine noodles (my kids favourite) but you can pair it with:

  • Whole grain rice
  • Mashed potatoes
  • Cauliflower rice
  • Zucchini noodles
  • Steamed or Roasted Vegetables

Now I will admit, a traditional Cacciatore recipe calls for pitted black olives. But my toddler melts down when she sees them. So I don’t add them into our dish. But feel free to add them to your meal to make it a traditional chicken cacciatore.

Another ingredient I have to admit I don’t regularly use is canned tomatoes. I always have tomato sauce on hand, so I use that instead. My go-to is the PC organic sauces. It is a chunky sauce so you still get those bites of tomato.

Chicken Cacciatore


  • Four skinless chicken breasts
  • 1 can of tomatoes or 1 jar of tomato sauce (I use PC Organic Roasted Garlic Sauce, it’s a chunky tomato sauce)
  • 1/2 cup chicken broth
  • 1/2 cup dry white wine
  • 3 garlic cloves minced
  • 3 medium carrots chopped
  • 5 white mushrooms chopped
  • 1 medium yellow onion chopped
  • 1 red bell pepper chopped
  • 1 orange bell pepper chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried oregano
  • Basil pesto


  1. In the crockpot, place all of the ingredients in. Leaving the chicken for the top.
  2. Heat on high and cook for four hours. Cook on low for 7-8 hours.
  3. Add salt and pepper to taste
  4. Cook grain or side of choice.
  5. Top chicken with basil pesto.
  6. Serve!

So simple and easy! For a real hit of flavour. I highly recommend you sauté all the vegetables for seven minutes on high to really bring out a great flavour. But if you don’t have the time, you don’t need to worry about it. Putting everything in the crockpot will still make this dish delicious!
